How to make chia seed pudding

One of the most popular ways to access the health benefits of chia seed (see page 1) is to make chia seed pudding. It makes a great breakfast, and it's quick and easy because you prepare it the night before.
The basic recipe
To serve one person, in a bowl or jar, combine 3 tbsp chia seed to one cup of non-dairy milk such as soya milk, almond milk or coconut milk. Add the flavouings you want, then place in the fridge and leave overnight for the seed to swell up and absorb the liquid.
Add flavourings
Some additions are best incorporated the night before; some you'll want to add in the morning. What you add to your chia seed pudding is up to you, so experiment with the following to find out what you prefer. For some crunch, try flaked almonds, sunflower seeds or chopped nuts. For fruitiness try berries, raisins, chopped apple or dried fruit such as apricot. To sweeten the chia seed pudding, add agave syrup, honey, sugar alternatives such as stevia, or even sugar. A touch of spice such as ground cinnamon and ground ginger are also delicious.
